Quick food?

My Parents both work so neither has much time to cook, The food has fallen to my responsibility. We live overseas (out of the states) so some food items may be hard to find here. I need to be able to cook something really quick and easy...HELP!! (we're vegetarian)

Quick and Easy Doughnuts 1 (10 count) can refrigerated biscuits oil or Crisco shortening (for frying) frosting (optional) or powdered sugar (optional) Heat 1 inch of oil or Crisco Shortening in a skillet or heat up a Deep Fat Fryer or Fry Daddy. Separate biscuits, lay each one on a paper towel until ready to fry. Hold each biscuit inbetween your hands leaving thumbs free. With one of your thumbs, make a hole in each biscuit. Fry in the hot oil until brown. Turn over and fry until brown on the other side. Cool the doughnuts. Frost them or sprinkle with Powdered Sugar. Quick and Easy No Bake Chocolate Cookies 2 2/3 cups sugar 2/3 cup milk 1/3 cup cocoa 1/3 lb margarine 3/4 cup creamy peanut butter 1/2 teaspoon vanilla 3 1/2 cups quick oats Mix first four ingredients. Bring to a boil, boil 1 minute. Remove from heat and add vanilla and peanut butter. Stir until well blended. Stir in oatmeal. Drop by spoonfuls onto waxed paper. Store in refrigerator or freezer. 10 Minute ..quick and Easy Chocolate Brownie Pudding Cake 1 cup sugar 2/3 cup flour 2/3 cup cocoa 1/4 teaspoon salt 1 teaspoon baking powder 3 eggs 2 tablespoons melted butter 1 teaspoon vanilla 1/2 cup boiling water, with 3 tablespoons sugar, added Boil water with 3 tbsp of sugar and set aside. Combine all dry ingredients (first 5 ingredients) in a bowl, then add eggs,melted butter and vanilla until well blended, mixture will be thick. Butter a 9 inch microwavable pan or tupperware, even if its a tad smaller it's ok. Spread mixture evenly into the buttered pan. Very slowly pour water into the center of the mixture and do not stir! Cover well, with plastic wrap or lid. Cook in microwave on regular power for 5 minutes, check it to make sure it's set and if not put back in microwave for a couple more minutes. Sprinkle with powdered sugar and serve with your favorite toppings. Enjoy!

  3. Stir fry Brussels Sprouts Olive or peanut oil 1 clove garlic, minced 1 lb. Brussels Sprouts (all about the same size) 1 red bell pepper, cut into 1 inch by 1/2 inch strips 1/2 lb. mushrooms, sliced soy sauce water or broth toasted sesame seeds. In a deep wok or large skillet, heat oil. Saute garlic for 1 minutes. Add sprouts & bell pepper. Stir to combine, stir fry for 3 minutes. Add mushrooms and 1 teaspoon (or to taste) soy sauce and 1 tablespoon water or broth. Bring to a boil, cover and allow to steam for 4 to 5 minutes. Uncover, and serve with toasted sesame seeds.

  5. I live alone, so don't cook much. These are some of the things I eat for easy meals ( since I can't live on dessert like sugar cookie apparently does LOL): Breakfast-yogurt, cottage cheese,soy milk, oatmeal, quinoa flakes, whole grain cereal, fresh fruit Lunch-cheese sandwich with tomatoes and sprouts, canned soup and whole wheat crackers, salad with chickpeas and/or cheese, noodles cooked in veggie broth with added frozen veg Dinner-bean burritos, bean tacos, quesadilla with salsa, beans and rice, Boca burger on whole grain bun with tomato and avocado(don't know if you can get them but this is really good), veggies stir fry, whole wheat pasta with sauteed veg added to marinara from a jar (Barilla is my favorite) or pesto sauce Here's one recipe for you- green chile casserole one pkg uncooked corn tortillas one can cream of mushroom soup two small cans chopped green chile 2 cups shredded cheese Mix the soup and green chile, may thin with water or milk to spreadable consistency. Break the tortillas into pieces to fit in a layer on the bottom of an 8x8 baking dish. Add a layer of sauce and a layer of cheese-repeat until pan is mostly full (usually 3 layers) topping with cheese. Bake at 325 for 30-35 minutes until cheese is melted and golden on top. Let sit foe 5-10 minutes and enjoy-good with a fresh green salad.
